Zim woman dies of heart attack over work permit issues in SA. Chipo Mukandi, 45, a domestic worker, died after she was detained in Pretoria police cells for not having proper documentation.

A Zimbabwean woman has died of a heart attack over work permit issues in South Africa supposedly in fear of deportation.  The son, Clive Mandirahwe,22, told H-Metro that his mother died from a heart attack in fear of possible deportation.

“She did not have some papers but her passport was stamped. “I think my mum got so shocked since it was her first time being arrested over such an issue. “My father passed away a long time ago and now I’m left with my 11-year-old sister Nyasha,” he said.

Relatives told H-Metro that Chipo Mukandi, 45, along with other foreigners were arrested on November 27 in a South African Police Service (SAPS) operation on a bus in Pretoria.

“They were taken to Cullinan police station and she was put in police cells.

“An Ambulance was called in but unfortunately she died before she even got to the hospital,” said the brother Promotion Bhabhada. “Police are not assisting us in any way, they just said post mortem is four to five weeks.

“We have managed to raise money for funeral expenses and repatriation and we are now waiting for the papers to proceed,” he added. Chipo Mukandi is expected to be buried in Masvingo, her home area.

About two weeks ago, South Africa said it would not renew temporary permits of around a quarter-of-a-million Zimbabweans working in the country on their visas this month.

Castle Lager PSL postpones matches as COVID-19 wrecks havoc in teams

Castle Lager PSL postpones matches as COVID-19 wrecks havoc in teams. On Monday, the PSL directed clubs to test their players and officials for COVID-19 before they could start training the following day.

The Castle Lager Premier Soccer League (PSL) has postponed several matches which were scheduled for this weekend after some clubs returned positive COVID-19 cases.

Clubs were expected to meet a 10 am deadline on Tuesday to submit the results for the tests on all playing, technical and administrative staff.

It has emerged that a number of clubs had their members returning positive results for the virus, while some teams missed the deadline. This forced PSL to postpone five matches of round three fixtures which were scheduled for Saturday and Sunday.

The Manica Diamonds v Highlanders, Dynamos v Cranborne Bullets, ZPC Kariba v Triangle United, Black Rhinos v Caps Unite matches have been postponed.

The match between Harare City and Yadah, which was set for the National Sports Stadium on Wednesday, has been moved to Sunday at the same venue.

PSL spokesperson Kudzai Bare said this particular fixture reschedule had nothing to do with COVID-19. Bare said: The postponement of the other matches is due to COVID-19 related issues.

Only four matches will now be played over the weekend amid fears that there could be further disruptions in the league campaign due to the surge in positive cases.

COVID-19 new infections in the country have been rising steadily in the past few days, with over 5 000 positive cases recorded in the last two days to bring the total cases since the onset of the pandemic to over 141 601.

Premier League football only returned last month after a 2-year’s absence due to the coronavirus outbreak.

Rapper Ti Gonzi refuses kupera, insists he’s got Zim Hip Hop under his belt

Rapper Ti Gonzi refuses kupera, insists he’s got Zim Hip Hop under his belt. It seems like yesterday when the self proclaimed King of Hip Hop yeku Ghetto stole the shine grabbing all the awards his hands could get, topping all the musical charts. But, all that glory suddenly turned into a story to remember.

As one of his lines goes ‘Kudhara Kwainakidza!’ Every music lover would agree that you can not talk about Zim Hip Hop without mentioning Ti Gonzi, well at least that was the case back then.

In the midst of the ‘nhingi apera/ nhingi haacharire’ social media buzz Nehanda Radio caught up with Ti Gonzi real name Tinashe Gonzara who has seemingly lost his grip in the music industry. Gonzi insists he still has everything under control and is set for a major come back in 2022.

He admitted that he hasn’t been doing well due to a number of difficulties he had to face. “A lot of things have been happening but I have been trying my best, it wasn’t a really good year. I still have some projects that I am working on,” said Gonzi.

The Kudhara crooner insisted that although people were not feeling him at the moment, he is fully booked for the festive season and that’s a sign he still got Hip Hop under his control.

“I have been releasing and one of my latest projects is trending on YouTube. I am booked every weekend of the festive season.”

Quizzed why his music hasn’t been on rotation on local radio stations and why it’s not being played on every street corner as it used to be in 2018 and 2019, the Kure rapper attributed his challenges to having disputes with his management.

“The reason why my music has not been landing well is because I was having problems with my management and distribution team.

“Now that I’ve sorted out everything and I am in control, my people should expect a hit any time soon,” he added. The Hip Hop fraternity in Zimbabwe is currently on the rise and it is the new cats who keep shining. Only a few have managed to hold on to the glory.

MP Temba Mliswa supports Chief Ndiweni diaspora vote petition submitted to Boris Johnson

MP Temba Mliswa supports Chief Ndiweni diaspora vote petition submitted to Boris Johnson. Chief Ndiweni, who is based in the United Kingdom, last week submitted a petition to Johnson articulating the need for President Emmerson Mnangagwa’s under-fire administration to respect the rights of Zimbabweans abroad to have voting access.

Norton legislator Temba Mliswa has registered his support for dethroned Ntabazinduna chief, Felix Nhlanhlayamangwe Ndiweni’s move to petition UK Prime Minister Boris Johnson to push Zimbabwean authorities to allow citizens in the diaspora their voting rights.

But Chief Ndiweni faced backlash from a certain section of Zimbabweans, mainly Zanu PF supporters who argued that he had ‘sold out’. Mliswa took to Twitter to argue that Zimbabweans in the diaspora had been instrumental in assisting colleagues at home through diaspora remittances and other economic assistance hence they should be allowed to vote.

“Some sections have sought to attack Chief Ndiweni for his petition. What is uniquely funny is that the same people celebrated the @ZANUPF_Official initiative to send clerics to meet the Canterbury leaders. If Chief Ndiweni sold out then @ZANUPF_Official has also sold out,” Mliswa said.

“What Chief Ndiweni is pushing for is an important factor. The diaspora has been fundamental to the sustenance of the Zim economy & it’s a travesty of justice to implore people to send money and invest and yet deny them their vote. Flying here to vote we all know it’s not practical.”

Mliswa added that Zanu PF will not allow diaspora vote because it does not have supporters abroad.

“However it should be understood that @ZANUPF_Official will always resist this because it’s clear that it has little support in the diaspora. Most of the people in the diaspora fled economic mismanagement here and won’t have a soft spot for the ruling party.

“The whole argument against Chief Ndiweni, who is a traditional leader and thus represents people, is political and not vested with logical nous. Has he campaigned against anyone or the country? What he is pushing for is one of many reforms already noted by the opposition and people.

“It’s unfortunate that due to polarisation we have some sections bastardising certain words and using their party positions and definitions as the standard. One isn’t a sellout just because he thinks and talks contrary to your party position or orientation. The nation is supreme.”

In submitting his petition, Chief Ndiweni told Boris Johnson. “There is no provision for Zimbabwean citizens in the diaspora to vote from outside the country, unless in diplomatic missions” adding “those in Diaspora should be allowed to vote”.

Chinese company yet to start airport job 7 months after winning tender

Chinese company yet to start airport job 7 months after winning tender. CHEC signed a multi-million dollar contract with the Civil Aviation Authority of Zimbabwe (CAAZ) under murky circumstances seven months ago.

A controversial Chinese firm, China Harbour Engineering Company (CHEC), that won a multi-million-dollar contract to fix Zimbabwe’s Air Traffic Control Communication Systems (ATCCS) seven months ago is yet to commence work.

The Standard this week reported that some senior government officials were blaming the Reserve Bank of Zimbabwe (RBZ) of delaying the release of the money required to fund the project.

According to the contract signed between the two parties, CHEC was supposed to supply and install air traffic control communication systems at a cost of US$4,810,177 and accessories that would cost US$87,163, bringing the total to close to US$5 million.

CHEC was, however, reported to have a tainted history during the awarding of the lucrative project amid blacklists and bribery reports in some countries. At the negotiation stage, it was also revealed that the contract hit some humps when CHEC insisted on getting its payment once it had delivered the specified communication products required to revamp the aviation system, while CAAZ argued that the Chinese company must install the equipment to ensure it worked, and this carried the day.

Transport ministry permanent secretary Thedius Chinyanga told the Standard in an interview that the project was within the agreed time frame but blamed the central bank for delaying disbursement of funds.

He exonerated CHEC from blame saying the company did not “contract itself,” but was waiting for its Zimbabwean partners to fulfil their end of the bargain.

“In any contract, there are two parties. In any event, so far CHEC has performed according to the dictates of the contract. They have signed the contract.

“They have provided a bank guarantee for the contractually provided advance payment.

“They have caused commencement of manufacture of the equipment, which is not an off the shelf equipment. “This will be followed by client experts travelling to China next year for a quality assurance mission,” said the ministry’s top bureaucrat.

Easy way to make roast turkey

Less than 2 hours of roasting makes this roast turkey breast a relatively quick Christmas dinner. As well as lemon and thyme, the stuffing features tart dried cranberries, crunchy almonds and sweet leeks.

Ingredients
For the stuffing
1 tbsp sunflower oil
1 onion, finely chopped
1 leek, trimmed and finely sliced
4 pork sausages, around 275g/9¾oz
50g/1¾oz dried cranberries
25g/1oz flaked almonds
1 unwaxed lemon, finely grated zest only
1 heaped tbsp roughly chopped fresh thyme leaves
40g/1½oz dried white breadcrumbs
salt and freshly ground black pepper
For the turkey
1.5kg/3lb 5oz turkey breast joint, fully thawed if frozen
16 rashers smoked streaky bacon
2 tbsp sunflower oil, plus extra for oiling
fresh thyme and bay leaves, to garnish
For the gravy
2 tbsp plain flour
splash of wine
450ml/16fl oz chicken stock, made with 1 chicken stock cube
1 tbsp redcurrant jelly
Method
To make the stuffing, heat the oil and gently fry the onion and leek for 5 minutes, or until well softened and lightly browned, stirring regularly. Tip into a mixing bowl and leave to cool for 30 minutes.

For the turkey, generously oil a small, sturdy roasting tin, roughly 30cm x 22cm/12 x 8½in – the turkey needs to fit snugly.

To continue the stuffing, once the onion and leek are cool, add the cranberries, almonds, lemon zest, thyme and breadcrumbs. Squeeze the sausage meat out of the skins and add it to the bowl.

Season with salt and lots of pepper. Mix well with a spoon or with clean hands until thoroughly combined.

Place the turkey breast on a board and gently remove the skin. Turn over and cut horizontally almost all the way through the thickest part of the breast and open up like a book, so that the turkey has a flatter, more oblong shape. Cover with a sheet of cling film and bash with a rolling pin until around 2.5cm/1in thick all over.

Place a sheet of cling film on a work surface and put eight pieces of kitchen string, each 50cm/20in long, roughly 4cm/1½in apart along its length. Stretch each rasher of bacon with the back of a knife until around 32cm/13in long. Place the bacon rashers on top of the string and cling film, overlapping each slice.

Place the turkey breast, smooth-side down, on top of the bacon and arrange the filling all the way down its length. Bring up the cling film and bacon on both long sides to enclose the filling.

Tie firmly with the string and discard the cling film. Place the turkey parcel in the prepared tin, knot-side down. (You can cover and chill for up to 24 hours before cooking if using a fresh turkey joint, or cook the same day if using a previously frozen joint.)

Preheat the oven to 200C/180C Fan/Gas 6. Uncover the stuffed turkey joint, then drizzle with oil and season with black pepper. Cover loosely with foil and roast for 1 hour. Remove the foil and continue cooking for a further 30–45 minutes, or until the bacon is crisp and the turkey and stuffing are thoroughly cooked.

Transfer the turkey to a warmed platter. Cover with foil and a tea towel and leave to rest for 15 minutes.

For the gravy, put the roasting tin on the hob over medium heat and stir in the flour. Add the wine and cook for 15–20 seconds, stirring constantly.

Gradually add the stock, stirring all the time. Bring the liquid to a simmer, stir in the redcurrant jelly and cook for 2 minutes, or until thickened and glossy. Season to taste, strain carefully (the tin will be extremely hot) through a sieve into a saucepan and keep warm until ready to serve.

Snip the string off the turkey and garnish with bay leaves and thyme. Carve into slices and serve with the hot gravy.

The MetaTrader 4 – What You Need to Know

$
0
0

With more than $6.6 trillion now traded globally on a daily basis, the forex market is one of the largest and most liquid entities of its type anywhere in the world.

This number has increased markedly from the $5.1 trillion in 2016, while just $1.2 trillion was traded during each 24-hour period way back in 1995.

Undoubtedly, this increase has been inspired by the rise of accessible trading platforms like the MT4. But what exactly is this type of trading platform, and what are the key things that you need to know about it?

What is the MetaTrader 4?

Let’s start with the basics; as while the MetaTrader 4 (MT4) may sound like a video game, it’s actually the single most popular and established forex trading platform in the world.

Despite being superseded by the MT5, this platform has remained the standard bearer in developed economies, particularly among independent and retail traders who benefit from increased accessibility to the forex market.

Although some forex brokers have developed their own proprietary trading platforms, most offer compatibility with the MT4, which in turn affords them access to a large audience of novice and part-time investors.

Over time, the platform has also cultivated a sense of popularity and familiarity among users, enabling it to remain in high demand despite being developed back in 2005.

What’s Good About the MT4?

Ok, we hear you ask, but what factors and attributes underpin the popularity of the MT4? Well, to begin with, it’s flexible, enabling you to trade freely and access your account seamlessly through a laptop, smartphone or tablet device.

What’s more, the platform and its interface are incredibly easy to navigate, which is ideal for beginners who are getting to grips with a host of technical indicators and attempting to analyse various datasets.

To this end, the features of the MT4 remain largely the same regardless of your chosen broker, allowing for superior and easier use across the board.

What’s more, the MT4 boasts access to a diverse range of customisable charts, enabling you to choose how data is presented in real-time and making it far easier to make effective real-time decisions.

What Else Do I Need to Know About the MT4?

Another key element of the MT4 is that it features so-called “forex robots”, which allows you to access algorithmic trading and create highly profitable automated strategies.

Forex robots are synonymous with high-frequency trading and strategies such as scalping, which require investors to execute a high volume of low value orders in relatively short periods of time.

Additionally, the widespread nature of the MT4 means that a huge number of successful traders continually broadcast and share signals with others. Sometimes, this will incur a fee, but it enables part-time traders to follow successful investors and replicate their strategies.

More specifically, the program has a signal feature that’s designed so that you can follow other traders, creating the opportunity to copy and modify their strategies while learning how they navigate the marketplace.

Christmas roast beef – Recipe

Christmas turkey in favour of a foolproof step-by-step recipe to cook roast beef recipe with all the trimmings. Use our roasting calculator to work out exact roast beef cooking times and temperatures.

Ingredients
For the Yorkshire puddings
225g/8oz plain flour
8 free-range eggs
600ml/20fl oz milk
sea salt and freshly ground black pepper
For the vegetables
1 cauliflower, cut into large florets
300g/10½oz French beans, trimmed
1 broccoli, cut into large florets
8 carrots, peeled and cut into batons
For the roast beef
2.75kg/6lb 2oz whole beef sirloin, fat and sinew trimmed
250g/9oz beef dripping or lard
For the gravy
200ml/7fl oz red wine
1 litre/1¾ pints beef stock
For the roast potatoes
2kg/4lb 8oz large floury potatoes such as King Edward, each peeled and cut into 2 or 3 pieces
For the Brussels sprouts
200g/7oz smoked streaky bacon slices, cut into lardons
500g/1lb 2oz Brussels sprouts, trimmed and finely shredded
250g/9oz cooked chestnuts, roughly chopped
175g/6oz butter
Method
First prepare the Yorkshire pudding batter. Pour the flour into a large mixing bowl. Make a well in the centre, then whisk in the eggs one at a time, bringing in the flour from the insides of the well as you do so.

Gradually whisk in the milk until the batter is smooth and well combined. Season with salt and pepper, then cover the bowl and chill in the fridge overnight.

You can also prepare the vegetables a day in advance. Bring a large pan of salted water to the boil. Prepare a large bowl of iced water. Add the cauliflower florets to the boiling water and boil for 4-5 minutes, or until perfectly tender. Remove from the pan using a slotted spoon and plunge into the bowl of iced water. Set aside until the florets have cooled (this will prevent them from continuing to cook). Drain, transfer to a roasting tray and set aside.

Repeat the process with the French beans, simmering them for just 2-3 minutes. Add the drained, cooled beans to the tray.

Repeat the process with the broccoli florets, simmering them for 1-2 minutes. Add the drained, cooled broccoli to the tray.

Repeat the process with the carrot batons, simmering them for 6-7 minutes. Add the drained, cooled carrot to the tray.

This will ensure you have all the vegetables prepared and perfectly cooked ready to reheat on the day. Chill all of the vegetables, covered, in the roasting tray (or in a re-sealable food bag or plastic container) until needed.

On Christmas Day, prepare the beef. Preheat the oven to 200C/180C Fan/Gas 6.

Score the fat of the beef in a criss-cross pattern using a sharp knife, then season the beef generously with salt and pepper.

Heat a frying pan over a high heat. When the pan is very hot, add 25g/1oz of the beef dripping and, when it has melted, fry the beef on all sides until browned all over.

Place the beef joint, fat side facing downwards, into a roasting tray and roast for 45-50 minutes (for medium-rare) or longer until cooked to your liking – although bear in mind that the meat will continue to cook as it rests. Turn the beef joint halfway through the cooking time. When the beef is cooked to your liking, transfer it to a large plate, cover with aluminium foil and set aside to rest for 30 minutes.

Meanwhile for the gravy, return the frying pan containing the meat juices to a medium heat and, when it is hot, add the wine. Bring the mixture to a simmer and continue to simmer until the volume of liquid has reduced by half.

Add the beef stock and return the mixture to a simmer, simmering until the volume of liquid has reduced by one-third, then season with salt and pepper. Strain the gravy into a jug or gravy boat. Cover and keep warm until needed (you may need to reheat it before serving).

Next, make the roast potatoes. Place the potatoes into a large saucepan, cover with cold water, add a pinch of salt and bring to the boil. Reduce the heat until the water is simmering and simmer the potatoes for 3-4 minutes. Drain the potatoes using a colander and shake them around a little in the colander to roughen the edges. Set aside.

When the beef has only 35 minutes left to cook, put 100g/3½oz of the remaining beef dripping or lard into a deep-sided roasting tray. Heat the fat in the oven for 5 minutes, or until smoking hot.

Carefully add the cooked, drained potatoes to the hot fat, making sure you keep your face as far away from the roasting tray as possible in case the fat spits. Season the potatoes with sea salt, then return the roasting tray to the oven. Roast the potatoes with the beef for 30 minutes, or until they are starting to turn golden-brown and crisp.

Turn the potatoes over after you remove the beef from the oven, then increase the oven temperature to 220C/200C Fan/Gas 7 and roast the potatoes for a further 30 minutes.

As soon as you have turned the potatoes over, divide 100g/3¾oz of the remaining dripping or lard equally among the holes of two 12-hole muffin tins or Yorkshire pudding tins. Heat the fat in the oven for 10 minutes, or until smoking hot.

Meanwhile, transfer the Yorkshire pudding batter to a jug. Carefully pour the Yorkshire pudding batter into the tins, filling each hole two-thirds full. Bake the Yorkshire puddings in the oven with the roast potatoes for the final 20 minutes that the potatoes should have left to cook, making sure you do not reopen the oven door.

After 20 minutes, open the oven door slightly to allow any steam to escape. Remove the potatoes, which should be ready now (prick them with a sharp knife to check they are tender in the middle). Transfer to a serving dish and keep warm.

Reduce the oven temperature to 190C/170C Fan/Gas 5. Continue to cook the Yorkshire puddings at this temperature for a further 12-15 minutes, or until crisp, risen and golden-brown. Transfer to a serving dish and keep warm.

For the Brussels sprouts, heat the remaining dripping or lard in a large frying pan over a medium heat. Add the bacon and fry for 3-4 minutes, or until crisp and golden-brown.

Add the sprouts and stir-fry for 2-3 minutes, or until just wilted. Add the chopped chestnuts, half of the butter and 2 tablespoons of water, then stir-fry until the chestnuts have heated through and the liquid has evaporated. Season with salt and pepper. Remove from the heat and keep warm.

Finally, bring a large saucepan of salted water to the boil, add all of the blanched vegetables and simmer for 30 seconds, or until heated through. Drain well and transfer to a serving platter, dotted with the remaining butter.

Chocolate self-saucing pudding – recipe

Here’s an easy molten chocolate pudding that’s a real crowd-pleaser. The chocolate sauce gets poured on the top, but miraculously ends up on the bottom. How do they do that?
Ingredients
175g/6oz unsalted butter, at room temperature, plus extra for greasing the dish
300g/10½oz soft light brown sugar
3 large free-range eggs, beaten
1 tsp vanilla extract
175g/6oz plain flour
40g/1¾oz cocoa powder, plus 2 tbsp
1 tsp bicarbonate of soda
pinch salt
3 tbsp milk
icing sugar, for dusting
double cream, to serve
How-to-videos
Method
Preheat the oven to 170C/150C Fan/Gas 3. Grease the inside of an ovenproof dish with a little butter and set aside.

Cream the measured butter with 225g/8oz of the soft light brown sugar until pale and light, scraping down the sides of the bowl with a rubber spatula from time to time.

Gradually add the beaten eggs, mixing well between each addition and then add the vanilla extract and mix again to combine.

Sift the flour, 40g/1¾oz cocoa, bicarbonate of soda and a pinch of salt into the mixture and mix again until just combined.

Add the milk and mix again until smooth. Spoon the mixture into the prepared dish and level with the back of a spoon.

In a small bowl mix together the remaining 75g/2½oz soft light brown sugar, 2 tablespoons of cocoa powder and 6 tablespoons hot water. Spoon this chocolatey syrup over the chocolate sponge mixture and place the dish in a large, deep roasting tin.

Boil the kettle and pour boiling water into the tin, around the dish so that the water comes halfway up the sides of the dish. Carefully slide the roasting tin into the oven on the middle shelf.

Bake for about 45 minutes, or until the pudding is well-risen, the top is nicely cracked and a skewer inserted into the middle of the pudding comes out with a moist crumb. Dust with icing sugar and serve immediately with double cream.

Vegetarian nut roast pie with cranberries

Although this is a veggie roast, this truly is a meal fit for a king. I admit this is not the shortest of recipes, but it is really satisfying to make and the pastry is brilliantly quick and simple.

For this recipe you will need an 18cm/7in springform cake tin.

Ingredients
For the filling
drizzle olive oil
4 leeks, finely sliced
4 rosemary sprigs, picked
6 thyme sprigs, roughly chopped
3 garlic cloves, finely chopped
250g/9oz chestnut mushrooms, finely chopped
5 sage leaves, roughly chopped
600g/1lb 5oz mixed nuts (e.g. pecans, cashews and hazelnuts)
150g/5½oz Gruyère, grated
3 free-range eggs
150g/5½oz dried cranberries
125g/4½oz frozen cranberries
For the pastry
100ml/3½fl oz water
80g/2¾oz butter
125g/4½oz plain flour, plus extra for rolling out the pastry
150g/5½oz wholemeal flour
pinch salt
1 free-range egg, plus 1 free-range egg, beaten, to glaze
For the gravy
2 tbsp butter
1 tsp tomato purée
1 tsp yeast extract
1 tbsp plain flour
few rosemary sprigs
500ml/18fl oz vegetable stock
pinch brown sugar
salt and freshly ground black pepper
Method
Preheat the oven to 200C/400F/Gas 6 and grease a 18cm/7in springform cake tin.

Heat the oil in a frying pan and fry the leeks, rosemary and thyme for 4-5 minutes, or until softened. Add the garlic and cook for another minute.

Add the mushrooms and sage and cook for 2-3 minutes, then remove from the heat, transfer to a large bowl and set aside to cool. (Reserve two tablespoon of this mixture for the gravy.)

Toast the nuts in the oven for 8-10 minutes (keep an eye on them as they burn really easily). Remove from the oven and set aside to cool.

Blend the nuts in a food processor to a coarse powder and add to the leek mixture with the cheese. Mix until well combined and season with salt and freshly ground black pepper.

Stir in the eggs until well combined.

For the pastry, heat the water and butter in a small saucepan over a medium heat until the butter melts and the mixture just boils.

Mix the flours, salt and egg together in a bowl, then add the butter mixture and mix together really quickly until combined. Shape the dough into a ball (it should be quite moist) and chill in the fridge for five minutes.

Tear off one-fifth of the pastry and set aside, then knead the remaining pastry briefly and roll out on a well-floured work surface into a 5mm/¼in thick circle.

Flour the top of the dough, fold into four, and use it to line the 18cm/7in springform cake tin. Put the folded dough into the tin with the pointed end towards the middle, then unfold the dough so that the excess falls over the side (the dough will be quite fragile). Now ease the dough into the corners of the tin. If the dough tears, squeeze it back together again, this pastry is very forgiving.

Trim the pastry, leaving a 1cm/½in border.

Spoon half of the filling into the tin, pressing it down tightly with a wooden spoon. Tip over the dried cranberries, press down a little and finish with the rest of the pie filling, pressing down well.

Brush any exposed pastry with the beaten egg.

Roll the reserved pastry into a circle, and using the cake tin as a guide, cut out a circle with a 1cm/½in border.

Place the pastry over the top of the tin and squeeze or crimp the lid onto the pie to seal it, trimming any excess. Cut a slit in the middle of the pie to let any steam escape and bake in the oven for 20-25 minutes.

Remove the pie from the oven and carefully remove the tin. Slide the pie onto a baking tray and glaze the top and sides of the pie with the beaten egg, then return to the oven for a further 15 minutes, or until golden-brown.

Remove the pie from the oven, glaze the top again and top with the frozen cranberries. Return to the oven for a further 5-10 minutes.

Meanwhile, for the gravy, melt the butter in a saucepan and add the reserved mushroom and leek mixture followed by the tomato purée. Stir on a low heat for 2 minutes, or until it changes colour to a deeper shade of brown.

Add the yeast extract, flour and rosemary then gradually add the stock. Bring to the boil, then season with salt pepper and brown sugar.

Simmer for 10-15 minutes, until thickened. (You can strain the mixture for a smooth gravy if you like.)

Chickpea and cauliflower curry – Recipe

The flavours will improve overnight, so if you’re cooking for one you can look forward to an even tastier dinner the next day.

Each serving provides 587 kcal, 16g protein, 71g carbohydrates (of which 12g sugars), 23g fat (of which 12g saturates), 15g fibre and 0.3g salt. Serve with cooked rice or warm naan bread and garnished with sliced green chilli, or some roughly
Ingredients
1 tbsp sunflower or vegetable oil
1 small onion, sliced
1 garlic clove, crushed or finely chopped
1 tbsp grated fresh ginger (about a thumb-sized piece)
1 tbsp medium or madras curry powder
2 tsp ground turmeric (optional)
400g tin light coconut milk
1 small cauliflower, cut into florets, stalk sliced
400g tin chickpeas
1 lemon, cut into wedges

Method
Heat the oil in a saucepan and fry the onion for 5 minutes until softened. Add the garlic and ginger and fry for 2 minutes, then stir in the spices and cook for 30 seconds.

Add the coconut milk, cauliflower and the tin of chickpeas, liquid and all. Partially cover the pan and bring to the boil, then simmer for about 8 minutes until the cauliflower is tender and the sauce has thickened. If the sauce reduces too much before the cauliflower is ready, splash in some water. Or if the cauliflower is nearly done and the sauce is too thin, take the lid off to allow the sauce to reduce.

Squeeze in the juice from one or two lemon wedges, to taste. The curry shouldn’t need any salt.

To serve, scatter with chilli if you like it hot, coriander if you like it mild, or a bit of both. Serve with rice or naan bread and extra lemon wedges.

Wiigan Athletic captain Tendayi Darikwa ditches Warriors

Wiigan Athletic captain Tendayi Darikwa ditches Warriors. Wigan Athletic captain, Tendayi Darikwa, has excused himself from the Zimbabwe football national team ahead of the Africa Cup of Nations finals in Cameroon next month.

He becomes the team’s latest high-profile player to withdraw from the tournament. Khama Billiat quit international football last month, while marshal Munetsi and Brenda Galloway are unavailable, through injury.

Many other experienced players were reportedly considering their participation at the Nations Cup finals. They feel the challenges, which haunted them at the last AFCON finals in Egypt, have not yet been resolved.

Darikwa, in particular, believes the national team’s capacity to punch according to their weight has been undermined by the challenges which usually confront them whenever they are in camp.

H-Metro Sport gathered that Darikwa told Warriors general manager Wellington Mpandare, upon receiving an invitation for the tournament, that he will not be available due to what he called “personal reasons”.

Mpandare confirmed the news.“Yes, Tendayi (Darikwa) was among the 40 players I sent invitations to their clubs requesting for their clearances ahead of the Afcon finals.

“I do not only send invitations to clubs but also speak to the players and he told me that he is not available for the Cameroon showdown. “He said he is excusing himself for personal reason.”

The 2021 AFCON finals will run from January 9 to February 6 next year. The Warriors, who have been drawn in Group B alongside Senegal, Malawi and Guinea, open their campaign with a match against the Teranga Lions of Senegal, on January 10.

Mpandare was asked to concentrate on certain players after consultations with coach Norman Mapeza, during the 2022 World Cup qualifiers.

The suspended ZIFA board had given Mapeza the responsibility to use the World Cup qualifiers as part of preparations for the Afcon showcase. He said Darikwa’s absence was a huge blow

“It’s unfortunate that he said he won’t be available,” said Mpandare. This would be a third consecutive time Darikwa has turned down, or withdrawn from international duty since his commitment in 2017.

The fullback pulled out of the Warriors camp, after the defeat away to Ghana, in a 2022 World Cup qualifier on October 9 this year, citing family commitments back in England.

He went on to miss the home fixture, against the Black Stars, three days later. The former Nottingham Forest defender also snubbed another call-up for the matches against South Africa and Ethiopia last month.

Miss Tourism Zimbabwe Chipo Mandiudza speaks on cyberbullying

Miss Tourism Zimbabwe Chipo Mandiudza speaks on cyberbullying. The Bulawayo-based beauty queen almost lost her Miss Tourism title after a section of social media users campaigned against her ascension claiming that she posts nudes and numerous other accusations to assassinate her character.

Reigning Miss Tourism Zimbabwe, Chipo Mandiudza, says one of her major priorities is to fight cyberbullying. She was later cleared and reinstated as the Queen after the Miss Tourism Board found no evidence of the claims on social media.

In an interview with H-Metro Lifestyle & Entertainment, Mandiudza personally expressed how cyberbullying was a torturous experience and vowed to prioritise a campaign against it on her duties as the queen. “We are living in an era where social media has taken a huge impact in our lives, this has given faceless people a chance to harass people with no repercussions.

“Some of these people have their own personal problems and are looking for where or whom to vent their anger on. “I personally have been a victim of cyberbullying and it did affect certain aspects of my personal life, mentally, emotionally and academically,” said Mandiudza.

“We should go back to the basics of educating and reaching out to people concerning this issue at hand.

“Now that the world is digital, my voice will be heard in different parts of the country through an informative virtual outreach program being the very top on my list,” she added. The 21-year-old also hailed the government’s efforts to curb cyberbullying.

“I’m glad to hear that the government has taken into action to consider cyberbullying as a crime that one can be punished for.

“If we look at it, cyberbullying is another means of killing someone inside out, it is like a slow poison, and this act demands excessive use of the law to those who would’ve committed such a crime,” she said.

Mandiudza has urged people on social media to respect other people’s feelings and stop misinforming people.

“It is our duty to protect ourselves and those around us. “I therefore urge and encourage social media users to be mindful of what they say and be cautious of spreading invalidated information.

“We cannot neglect the negativity that comes with social media even if it has given us so many benefits,” she told H-Metro Entertainment & Lifestyle.

This topic of cyberbullying coincides with the current global discussion as the owner of Facebook Mark Zuckerberg is under fire since his social media platform is being accused of having algorithms that promote hate speech and divisions.

Progress Chipfumo 44th birthday: I feel so young. The Sounds of Motherland boss said he was also grateful for the love and faith his fans have in him. Chipfumo, whose tough upbringing is no secret, sees the grace of the Lord after living more than four decades.

Musician Progress Chipfumo, who turns 44 this Friday, says he feels younger and more invigorated. I feel like a young man, happy and sad at the same time,” he told H-Metro Entertainment & Lifestyle.

“When I take a closer look at my life, I can’t believe God has taken me this far because I have lost so many friends along the way that I sometimes feel like crying.

“Healthwise, I feel like I am getting younger and energetic because I’m particular with the stuff that I consume. “It’s not by choice that I am still alive but it can be by God’s grace that I am here celebrating with you,” he said. Asked how he would celebrate his birthday, Chipfumo said:

“I would have wanted to throw a massive party and merry-make with my usual fans but we can’t do that anymore due to the surge in Covid-19 cases.

“Of course hatizoshaye masmall-small on the day in question. I have to do something small with my inner circle.”

As an influencer of note, Chipfumo urged Zimbabweans to remain firm and resolute during such difficult times of Covid-19 pandemic. “My birthday message to fans will always remain the same – love and respect each other.

“We are living in difficult times where some have lost their beloved ones but I always encouraged people to have faith in the Lord all the time.

“Life might be difficult but the Lord will always provide the way; we are more than conquerors and fighters,” added Chipfumo.

The former Hohodza Hot Band member has been in the game for over two decades churning out chart-toppers. However, Chipfumo has had some bad off stage antics but his quality music always eclipses his shenanigans.
